FEATURED RECIPE :
Wash and peel the potatoes then add them to a large pot and fill with water making sure potatoes are fully submerged. Cover the pot and bring to a boil. Once at a boil, remove lid and cook potatoes until very fork tender then drain the potatoes.
While the potatoes boil, heat a large skillet on high heat then add the Hippie Organics® French Beans and season with 1/2 teaspoon of salt and 1/4 teaspoon black pepper and add the vegetable broth. Stir to combine then cover and simmer on medium heat for 8-10 minutes or until the French beans are tender.
Add the drained potatoes to a large bowl and mash well. Next, add the milk, mustard, butter, salt and black pepper. Mash again until well combined and creamy. Add more milk, if needed.
To serve, add the creamy mashed potatoes to a plate then top with the French beans. Drizzle with gravy and serve with cranberry sauce if desired.
