  • 1/4 cup honey

  • 2 cups Hippie Organics blueberries

  • 1 tbsp cornstarch

  • 2 tsp lemon juice

  • 1 tsp vanilla extract

  • 1 sheet frozen puff pastry

  • 1 egg, beaten

  • coarse sugar (for sprinkling)

  • vanilla ice cream (topping)



  1. Preheat the oven to 380 degrees F.

  2. In a medium bowl, combine the blueberries, honey, cornstarch, lemon juice, and vanilla.

  3. On a floured surface, roll the puff pastry out into a rectangle about 1/4 inch thick. Place the pastry on a parchment lined baking sheet and place the blueberries over the pastry, leaving a 1 inch border.

  4. Fold the edges up and over the blueberries. Now, brush the edges of the pastry with egg and sprinkle with sugar.

  5. Transfer over to the oven and bake for 25 - 30 minutes or until golden brown.

  6. Let cool for a little bit and serve with vanilla ice cream. Enjoy!
